Chicken Tortilla Soup

Ever have that feeling like you're going to get sick and want to stop your potential cold before it starts?
Whenever I even remotely think I'm catching a cold I make this soup. The herbs and spices are a seriously refreshing experience as it will open your sinuses, clear your throat, and pretty much destroy whatever cold that tries to sneak up on you. 


I like to begin by gathering the ingredients, to ensure I have everything I need prior to turning the stove on. For me it just makes life a lot easier. Begin by sauteing 1 onion, 1/2 a green pepper, 1 medium sized jalapeno and 4 minced garlic cloves.

While the vegetables are cooking, I like to cook the chicken a bit by putting it it on my George Foreman grill. A lot of recipes will have you place the raw chicken in the pot to cook with the rest of the ingredients but ( I may be wrong) I imagine that could lead to some serious stomach/health issues or even food poisoning. I just prefer to be safe than sorry. Once the chicken has cooked for a few minutes, place the full chicken breasts in the pot with the other ingredients and boil it all for about 15 minutes. 
Remove the chicken and shred it by pulling it apart with 2 forks. Return the chicken to the pot and simmer for an additional 45 minutes. Serve topped with crushed tortilla chips, cheese and cilantro.

PS- If you plan on making it in a slow cooker, you'll do everything the same way except cook it on high for 4 hours or low for 8 hours. Also, if you're vegetarian, follow the recipe but replace the chicken with black beans and the broth for vegetable broth.
