Apple Strudel Coffee Cake

What happens when I'm left alone with a bag full of apples??? AWESOMENESS in an 8x8 pan.
Since I'mo n one of my health and wellness kicks, I thought it would be a good idea to only keep the house stocked with healthy things- like apples. It was a perfectly logical and excellent idea until my sweet tooth reminded me that I'm notorious for experiment cooking that actually turns out delicious. Somehow, I managed to buck my own system to create this Apple Strudel (or Streusel) Coffee Cake thing.

Not only is it amazingly good, but it's good as a meal for breakfast and can easily substitute as a nice little snack or dessert. Unfortunately I don't have more pics to show you because I made it so quick I forgot to grab the camera, but I tried to make the directions as descriptive as possible. So, here it goes: 

Ingredients
Strudel Topping
-2/3 Cup Pancake mix
-2/3 Cup packed brown sugar
-1 teaspoon ground cinnamon
-1/2 teaspoon ground nutmeg
-1/4 Cup applesauce (or butter) - I made my own here

Coffee Cake
-2 Cups Pancake Mix
-2/3 Cup Water (or milk)
-3 Tablespoons Granulated Sugar
-1 Egg
-2 Medium Apples, peeled and thinly sliced (about 2 Cups worth)
-2 tablespoons chopped nuts (optional)

Glaze
-2 teaspoons Milk
-1/2 Cup Powdered Sugar

Directions
1. Heat oven to 400°F. Spray 8 or 9-inch square pan with cooking spray. In smal bowl, mix 2/3 cup Pancake mix, brown sugar, cinnamon and nutmeg. Cut in applesauce, using pastry blender (or pulling 2 knives through ingredients in opposite directions), until crumbly; set aside.

2. In medium bowl, stir together 2 cups Pancake mix, 2/3 cup water,  sugar and egg; beat vigorously 30 seconds with spoon. Spread half of batter in pan. Arrange apple slices on batter; sprinkle with half of streusel topping. Spread with remaining batter; sprinkle with remaining topping (and chopped nuts).

3. Bake for  about 25 minutes or until toothpick inserted in center comes out clean. Cool in pan for 20 minutes. In small bowl, stir glaze ingredients until smooth enough to drizzle. Drizzle glaze over warm coffee cake.
