Ranch Parmesan Baked Chicken

When it comes to food I have always been extremely picky and I'm really trying to come out of my comfort zone because I'm learning I've been missing out on some great cuisines. Since I was raised vegetarian, I'm not prone to eat meat, but when I do it's always chicken.

This quick and easy meal was served with lightly peppered Broccoli and baked potatoes that were individually wrapped in foil-respectively-and baked in the oven with the chicken at 400 degrees for about 25 minutes. I absolutely love cooking this way because baked food tends to be better for you and I can do something more productive with that time. 

So here's how you can make it yourself.

-2 Boneless Skinless Chicken Breasts
-1/3 Cup Dry Breadcrumbs
-1/8 Cup Parmesan Cheese
-1/4 Cup Ground Black Pepper
-1/4 Teaspoon Garlic Powder
-1/3 Cup Ranch Salad Dressing

1. Heat oven to 400°F and set the oven rack to the lowest position. In shallow bowl mix breadcrumbs, Parmesan cheese, ground black pepper and garlic powder.

2. In a separate bowl, dip the chicken into the ranch salad dressing to coat both sides. Allow the excess to drip off then coat in the bread mixture.

3. Place a single layer or chicken on a greased baking sheet or line with foil and bake on a cooling rack. Avoid using a small baking dish as it may make the bottom of the chicken soggy.

4. Bake uncovered for 30-35 minutes or until chicken is cooked.

Makes 2 servings.
