Red Velvet Cheesecake Brownies

A Thanksgiving tradition.
This post is literally a day late, but this dessert is great any time of the year. If you love melt-in-your-mouth cheesecake and the sweet goodness of Red Velvet cake, you will love my highly requested Red Velvet Cheesecake Brownies. I know it sounds really complicated because you're mixing two amazing desserts. However, I have found probably the easiest way to make this sweet treat in under an hour (cook time included).


Begin by preheating your oven to 350 degrees and spray a 9"x13" pan with cooking oil. I personally like to line the pan with parchment paper for easier cleanup. 

Next, mix a 16 ounce box of Red Velvet cake mix, one stick of butter and 1 egg into a batter and set aside 3-4 Tablespoons of the mixture for the swirl on top. I prefer mixing the brownie batter in the pan instead of the bowl because it has a pretty thick consistency. Then, press the mixture into the bottom of the pan with a piece of parchment paper and set aside.

With a hand held mixer, on medium speed, beat 8 ounces of cream cheese, 1/3 Cup of sugar, 1 egg and 1/2 teaspoon of vanilla extract until smooth and spread the mixture over the brownie layer.

Spoon set aside brownie batter onto cream cheese layer and glide knife through layers to create swirl. Mix a cap full of vanilla, a tablespoon of the cream cheese, or water to the set aside brownie batter BEFORE adding it to the pan if you actually want swirls instead of the blob you see below. (You'll thank me later)

Finally, bake the brownies for 35-40 minutes. Place the brownies on a cooling rack and allow them to completely cool before you attempt to serve (Once again, you'll thank me later).
