Homemade Pumpkin Spice Latte

All because I had leftover pumpkin puree.

I don't drink coffee often, but when I do I always want the limited edition stuff that's no longer in season. After a semi-massive grocery trip, I stumbled upon some leftover pumpkin puree (from this Thanksgiving recipe) while I was rearranging the freezer. I'm glad I found it because today was one of those icky, super gloomy days that made me want to curl up with a hot drink, a big cozy blanket and Netflix.

After a few quick Google searches, I combined a few recipes my very own version of Pumpkin Spice Latte, and I'm happy to report it tastes just as good as Starbucks.

-2 Tablespoons Pumpkin Puree
-1/4 teaspoon Pumpkin Pie Spice (Recipe Below)
-1 Cup Milk
-1 Tablespoons Vanilla Extract
-1 Tablespoon Sugar
-1/4 Cup Hot Espresso
-Whipped Cream, for serving

   -1 teaspoon ground cinnamon
   -1/4 teaspoon ground nutmeg
   -1/4 teaspoon ground ginger
   -1/8 teaspoon ground cloves

STOVE TOP - Combine milk, pumpkin puree, sugar, pumpkin pie spice and vanilla in a medium saucepan on medium-high heat. Heat until milk begins to foam, not boil. Remove from heat and stir.

MICROWAVE - Combine milk, pumpkin puree, sugar, pumpkin pie spice and vanilla in a microwave safe bowl, cover the bowl with plastic and vent with a small hole. Microwave until the milk is hot, 1 to 2 minutes. Whisk vigorously until the milk mixture is foamy, about 30 seconds.

Pour the espresso into a large mug and add the foamed milk into a mug. Top with whipped cream and a sprinkle of pumpkin pie spice.
Now I never have to worry if my favorite drink is in season. And did I mention it was $1 to make?
