Garlic Cilantro Fries

Super Yum!

I was left with an abundance of cilantro from this Chicken Tortilla Soup Recipe. In an effort not to be wasteful, I needed to make something else to use it up. I remembered having cilantro garlic mashed potatoes years ago at a friends house and fell in love, so I decided to recreate it but experiment with fries instead (after all it's still a potato, right).
Begin by pre-heating your oil to 325 degrees. While the oil is heating up, clean and cut your potatoes into wedges, or fires. Dry the potatoes with a towel, removing as much water as possible. Remember oil and water do not mix.
Once the oil is hot, fry the potatoes for about 5-7 minutes, or until they're cooked to your liking. Combine cilantro and garlic salt in bowl and toss the fries in the mixture to coat them. Serve these fries with ketchup, or if you're feeling fancy, sprinkle parmesean cheese over them. Either way you can't lose.
Although this recipe will follow the fried method (don't judge me), you can also bake the fries with a few minor adjustments which are documented in the recipe card below.
