Gingerbread Mug Cake with Lemon Sauce

Last year I learned there are certain holiday traditions I need in order to complete the holiday season. This is definitely one of them.

Gingerbread cake is one of those absolute, must-have treats my family makes every single year for the holidays. It's one of those super yummy desserts that has been passed down for at least 4 generations, which means I expect it on the dessert table every year. Normally, my mommy would bake a huge cake (and I would always take most of it home with me), but since I spent the holidays with my boo thang this year, I had to make my own.

Since, I really don't need to start the year off in a sugar coma, I decided making a full 9x9 pan for myself was extremely too much. So, I decided to experiment with a single serve microwave option, and I must say this gingerbread mug cake tastes just like it was just pulled from the oven, sliced and served, complete with lemon sauce and powdered sugar. 

Keep in mind I do not use metric measuring utensils on a regular basis, and I was using a standard teaspoon (like the one pictured). If you do decide to use specified measuring spoons, please remember you do not have to have perfect measurements. Just be sure you taste the batter before you "bake" it, and add what you need to flavor it to your liking.
