I really don't have a
good reason fancy story why I made a single-serve Red Velvet cake other than I have a sweet tooth and wanted cake. It was one of those whims where I only wanted one slice but didn't want to buy a whole cake because I would probably eat the whole thing myself. Luckily, this is one of those experiments that turned out perfectly both times I tried it, so I'm going to let you in on what could possibly be the death of your diet because it's hard to stop yourself from making this dessert just once.
I used boxed Betty Crocker Red Velvet cake mix but you can use whatever mix you prefer. I suggest getting mixes that have pudding in them or claim to be moist cakes, because my cake was as soft as a pillow. I stored the extra mix in a mason jar, but you can use a large plastic Ziploc bag. Mine cooked perfectly in 1 minute, but if yours needs to 'bake' a little longer, microwave it in 10 second intervals-otherwise it may burn or get really hard.
I N G R E D I E N T S
3 TBSP of boxed cake mix
1 TBSP of Apple Sauce
1 TBSP of Water
D I R E C T I O N S
1. Spray your mug with cooking spray.
2. Mix all of the ingredients well in a mug and microwave it for 1 minute on high.
3. Allow to cool for 1-2 minutes.
4. Top with frosting and serve.
I can't guarantee it will change your life, but I will say you should definitely give it a try and tell me what you think!
