French Toast In a Mug

March 31, 2015

It's not even breakfast time, but I REALLY wanted French Toast.
Lucky for me, breakfast foods taste good at anytime of the day. Since I don't want to break my recent tradition of making a single serving recipe that can be cooked in a mug, I tried 2 different recipes for this dish, but I like you enough to only share the French Toast in a Mug recipe that's REALLY, REALLY good. I know most recipes will have you put the mixture in the mug, then add the bread on top - which is fine- but it tastes much better when you put the bread in the mug the pour the mixture on top.

  • 2 Slices of bread, cubed
  • 1 egg
  • 1 TBS of butter, melted
  • 1/2 tsp of sugar (optional)
  • 2 TBS of milk
  • 1 tsp cinnamon
  • 1/4 tsp vanilla

Place butter in microwave for about 30 seconds to melt, then coat the sides of your mug to prevent sticking. Whisk the egg in the mug, then add milk, sugar, cinnamon and vanilla. Mix well.
Add the cubed bread to the mix and allow it to soak for about a minute. You may need to gently stir the pieces of bread around half way through to make sure all of the pieces get coated evenly. Microwave on HIGH for about a minute and a half, check it every 30 seconds until the egg is completely cooked.
Top with powdered sugar and syrup. ENJOY!
